MInt tea
Here’s a way to make classic Moroccan mint tea that doesn’t require a traditional metal teapot. The amount of sugar is less than the original version, but it’s still quite sweet, as it should be.

Ingredients:
5 cups water
1 tablespoon green tea (preferably Gunpowder Green Tea)
3 tablespoons sugar
12 – 15 sprigs mint
Preparation:
Bring one cup of water to a boil. Add the tea and take off the heat immediately. Strain the tea leaves and discard the water. Bring the rest of the water to a boil. Add the tea and sugar and let it boil for a little less than a minute. Take off the heat and add the mint. Bring back to a boil.
Remove from the heat and set aside for a few minutes.
Aerate the tea by pouring one cup into a glass and pouring it back into the pot from as high as you can manage. Do this several times. Finally, serve the tea by pouring into a small narrow glass. It should be a little foamy at the top.
