Blueberry muffins

Ingredients

  • ⅓ cup (85g) plain Greek yogurt 

  • ¼ cup (50g) sweetener 

  • 2 large eggs at room temperature 

  • 1 teaspoon (5mL) vanilla extract 

  • zest of 1 lemon 

  • 1 ½ cups (150g) blanched almond flour 

  • 1 ½ teaspoons (6g) baking powder 

  • pinch of salt 

  • ¼ cup (50g) fresh blueberries

Preparation

  1. MIx dry ingredients

  2. Whisk using and hand mixer th wet ingredients

  3. Combine dry and wet ingredints using a spatula

  4. Add the blueberries

Divide into 2 mini loafs or 16 muffins

Bake at 330ºF for 25-30 minutes


Consider replacing 1/2 cup almong flour with  flex/coconut flour
