Ingredients
⅓ cup (85g) plain Greek yogurt
¼ cup (50g) sweetener
2 large eggs at room temperature
1 teaspoon (5mL) vanilla extract
zest of 1 lemon
1 ½ cups (150g) blanched almond flour
1 ½ teaspoons (6g) baking powder
pinch of salt
¼ cup (50g) fresh blueberries
Preparation
MIx dry ingredients
Whisk using and hand mixer th wet ingredients
Combine dry and wet ingredints using a spatula
Add the blueberries
Divide into 2 mini loafs or 16 muffins
Bake at 330ºF for 25-30 minutes
Consider replacing 1/2 cup almong flour with flex/coconut flour
