Tomato pizza

Ingredients:
3 tomatoes
Chives or Spring Onion
2 eggs
Salt
Pepper
1 tbsp flour
Butter or olive oil
Manchego Cheese
Preparation:
Slice tomatoes 1/2" and empty core
Chop the cores and add chopped chive (onion), eggs, flour, salt and pepper
Fry tomato rings in 1 tbs butter (or EVOO),
Pour in the filling, fry for 2 minutes ND FLIP
Finish with grated cheese.
